The most important point when booking is that Fuzhou is its own language, distinct from Mandarin and Cantonese; a Mandarin interpreter will not do for a first-language Fuzhou speaker in a hearing or a hospital. Many Fuzhounese also speak Mandarin, so we confirm at booking which language the speaker is most comfortable in for the setting in question.

Fuzhou is chiefly a spoken language and has no separate everyday writing system, so documents from Fujian are written in standard Chinese characters and certified translation runs from written Chinese rather than from spoken Fuzhou.
